When you make things, it is quite possible that the items you order and stock are only components of what you sell. It is especially important to keep track of your inventory in this case. Knowing your current stock levels will let you reorder with confidence. Knowing the average unit cost of your 'ingredients' will give you clarity when setting prices.

In a more conventional retail scenario, you'd record the cost of items you order and their unit sale amounts. Seeing the profitability of an item is simple.

You may need to track things a little differently. If you draw from large amounts of bulk material, it may not be practical to calculate exactly how much a custom piece cost you to make.
